Antipasto for Ferragosto😊

This was made for a family of four.


INGREDIENTS:

Cherries

Grapes

Figs

Strawberries

Grana Padano cheese

Mozzarella

Ricotta cheese

Kalamata olives

Green Noccelara olives

Prosciutto Fi Parma

Porchetta

Baby plum tomatoes

Melanzane

Pepperoni

Zucchini






METHOD:

In order to start the platter place your ricotta cheese in the middle then put the olives around the ricotta, one black and then one green.   Then put the tomatoes around that.  Cut the mozzarella balls and place around the tomatoes.  Next add the different fruits in different corners of the platter.  Put the meats along side the fruits.  Then add the grilled melanzane, zucchini, peppers and slices of Grana Padana cheese.  Finish  with some fresh basil leaves and a little extra virgin olive oil drizzled over the mozzarella and tomatoes.
