Chicken Bacon Ranch Pasta Salad
Ingredients:
• 12 ounces rotini pasta
• 2 cups cooked chicken breast, diced
• 8 slices bacon, cooked and crumbled
• 1 cup cheddar cheese, cubed
• 1 cup cherry tomatoes, halved
• 1 cup broccoli florets, bite-sized
• 1/2 cup cucumber, diced
• 1/2 cup red onion, finely diced
• 1/4 cup sliced green onions
For the Ranch Dressing:
• 1 cup ranch dressing
• 1/2 cup mayonnaise
• 1 tablespoon sour cream
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon black pepper
• 1 tablespoon fresh lemon juice
Directions:
1. Cook the rotini pasta according to the package directions until al dente. Drain, rinse under cold water, and let cool completely.
2. In a small bowl, whisk together the ranch dressing, mayonnaise, sour cream, garlic powder, onion powder, black pepper, and lemon juice until smooth.
3. In a large mixing bowl, combine the cooled pasta, diced chicken, crumbled bacon, cheddar cheese, cherry tomatoes, broccoli, cucumber, red onion, and green onions.
4. Pour the dressing over the salad and gently toss until everything is evenly coated.
5. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
6. Stir before serving and garnish with additional bacon, cheddar cheese, and green onions if desired.
