Marshmallow Peanut Butter Squares

Ingredients:


For the Squares:

• 1 cup creamy peanut butter

• 1/2 cup unsalted butter

• 1 teaspoon vanilla extract

• 1/4 teaspoon salt

• 1 (10-ounce) bag mini marshmallows

• 6 cups crispy rice cereal





For the Chocolate Topping:

• 1 1/2 cups milk chocolate chips

• 1/2 cup semi-sweet chocolate chips

• 2 tablespoons creamy peanut butter

• 1 tablespoon coconut oil or vegetable shortening















Directions:


1. Line a 9x13-inch baking pan with parchment paper or lightly grease it.

2. In a large saucepan over low heat, melt the butter and peanut butter together until smooth.

3. Remove from the heat and stir in the vanilla extract and salt.

4. Let the mixture cool for about 3 minutes so the marshmallows stay fluffy instead of melting
completely.

5. Fold in the mini marshmallows, then gently stir in the crispy rice cereal until evenly coated.

6. Press the mixture firmly into the prepared baking pan using a lightly greased spatula.

7. In a microwave-safe bowl, combine the milk chocolate chips, semi-sweet chocolate chips, peanut

butter, and coconut oil. Microwave in 30-second intervals, stirring after each, until smooth.

8. Spread the chocolate mixture evenly over the cereal layer.

9. Refrigerate for at least 1 hour or until fully set.

10. Slice into 16 squares and serve.
