Strawberry Shortcake Cheesecake
Crust
• 2 cups vanilla cookie crumbs
• 1/2 cup butter, melted
Cheesecake Filling
• 16 oz cream cheese, softened
• 1 cup powdered sugar
• 1 teaspoon vanilla extract
• 1 1/2 cups whipped topping
Strawberry Layer
• 2 cups strawberries, diced
• 2 tablespoons sugar
Crunch Topping
• 20 vanilla sandwich cookies, crushed
• 1 small package strawberry gelatin powder
• 4 tablespoons butter, melted
Directions:
1. Mix the cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
2. Refrigerate the crust while preparing the filling.
3. Beat the cream cheese until smooth.
4. Add powdered sugar and vanilla extract, mixing until creamy.
5. Fold in the whipped topping until combined.
6. Spread half of the cheesecake mixture over the crust.
7. Toss the strawberries with sugar and spread over the cheesecake layer.
8. Add the remaining cheesecake mixture and smooth the top.
9. In a bowl, combine crushed cookies, strawberry gelatin powder, and melted butter.
10. Sprinkle the crunch topping evenly over the cheesecake.
11. Refrigerate for at least 4 hours or overnight.
12. Slice and serve chilled.
