These Peanut Butter Chocolate Chip Banana Muffins are what I bake when a few ripe bananas are sitting on the counter and I want the kitchen to smell warm, sweet, and impossible to resist.
Ingredients:
• 3 ripe bananas, mashed
• 1/2 cup creamy peanut butter
• 1/3 cup brown sugar
• 1/4 cup granulated sugar
• 2 eggs
• 1 teaspoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon (optional)
• 3/4 cup chocolate chips
Directions:
1. Preheat oven to 350°F (175°C) and line a muffin tin.
2. In a large bowl, mix mashed bananas, peanut butter, brown sugar, and granulated sugar until smooth.
3. Add eggs and vanilla extract, mixing well.
4. In another bowl, whisk flour, baking soda, salt, and cinnamon.
5. Gradually combine dry ingredients with wet ingredients.
6. Fold in chocolate chips.
7. Divide batter evenly into muffin cups.
8. Bake for 18–22 minutes until a toothpick comes out clean.
9. Let cool slightly before serving.
