Tomato, Peach, and Corn Salad
Ingredients:
• 2 cups cherry tomatoes, halved
• 2 ripe peaches, sliced into thin wedges
• 2 cups sweet corn kernels (fresh, grilled, or frozen and thawed)
• 1/2 cup cucumber, diced
• 1/4 cup red onion, thinly sliced
• 1/4 cup fresh basil leaves, torn
• 1/4 cup crumbled feta cheese
• 2 tablespoons chopped fresh parsley
For the Honey Basil Vinaigrette:
• 3 tablespoons extra virgin olive oil
• 1 tablespoon fresh lemon juice
• 1 tablespoon apple cider vinegar
• 1 tablespoon honey
• 1 teaspoon Dijon mustard
• 1 small garlic clove, minced
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
Directions:
1. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, Dijon mustard, garlic, salt, and black pepper until well combined.
2. In a large serving bowl, combine the cherry tomatoes, peaches, sweet corn, cucumber, and red onion.
3. Add the basil, parsley, and crumbled feta cheese.
4. Pour the vinaigrette over the salad and gently toss until everything is evenly coated.
5. Let the salad rest for 10–15 minutes before serving so the flavors can meld.
6. Garnish with extra basil and feta cheese, if desired.
