Classic Macaroni Salad with Ham
Ingredients:
• 16 ounces elbow macaroni
• 2 cups cooked ham, diced
• 1 cup cheddar cheese, cubed
• 1 cup celery, diced
• 1 cup cucumber, diced
• 1/2 cup red bell pepper, diced
• 1/2 cup red onion, finely diced
• 1/2 cup sweet pickle relish
• 2 hard-boiled eggs, chopped
• 2 tablespoons chopped fresh parsley
For the Dressing:
• 1 cup mayonnaise
• 1/2 cup sour cream
• 1 tablespoon Dijon mustard
• 1 tablespoon apple cider vinegar
• 1 teaspoon sugar
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
Directions:
1. Cook the elbow macaroni according to the package directions until al dente. Drain, rinse under cold water, and cool completely.
2. In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, garlic powder, onion powder, salt, and black pepper until smooth.
3. In a large mixing bowl, combine the cooled macaroni, diced ham, cheddar cheese, celery, cucumber, red bell pepper, red onion, chopped eggs, parsley, and sweet pickle relish.
4. Pour the dressing over the salad and gently toss until everything is evenly coated.
5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.
6. Stir gently before serving and garnish with extra parsley or paprika if desired.
