Lo Mein Stir Fry
Ingredients:
• 12 ounces lo mein noodles
• 2 tablespoons sesame oil
• 2 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 1 cup broccoli florets
• 1 cup carrots, julienned
• 1 red bell pepper, thinly sliced
• 1 cup snap peas
• 1 cup mushrooms, sliced
• 3 green onions, sliced
• 2 tablespoons sesame seeds (optional)
For the Stir Fry Sauce:
• 1/4 cup low-sodium soy sauce
• 2 tablespoons oyster sauce
• 1 tablespoon hoisin sauce
• 1 tablespoon brown sugar
• 1 teaspoon sesame oil
• 1 teaspoon cornstarch
• 2 tablespoons water
Directions:
1. Cook the lo mein noodles according to the package directions. Drain and set aside.
2. In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, cornstarch, and water.
3. Heat the sesame oil in a large wok or skillet over medium-high heat.
4. Add the garlic and ginger, cooking for about 30 seconds until fragrant.
5. Add the broccoli, carrots, bell pepper, snap peas, and mushrooms. Stir-fry for 4–5 minutes until crisp-tender.
6. Add the cooked noodles to the skillet.
7. Pour the sauce over the noodles and vegetables.
8. Toss everything together until evenly coated and heated through, about 2–3 minutes.
9. Stir in the green onions.
10. Garnish with sesame seeds if desired and serve immediately.
