Ritz Cracker Cookies
Ingredients:
• 48 Ritz crackers
• 1 cup creamy peanut butter
• 1/2 cup powdered sugar
• 1 teaspoon vanilla extract
• 2 cups milk chocolate chips
• 2 tablespoons coconut oil or vegetable shortening
• 1/4 cup white chocolate chips, melted (optional, for drizzle)
• 2 tablespoons festive sprinkles or chopped peanuts (optional)
Directions:
1. Line two baking sheets or trays with parchment paper.
2. In a medium bowl, stir together the peanut butter, powdered sugar, and vanilla extract until
smooth.
3. Spread about 1 tablespoon of the peanut butter mixture onto one Ritz cracker and top with another cracker to make a sandwich. Repeat with the remaining crackers.
4. Place the sandwich cookies in the freezer for 20 minutes to firm up.
5. In a microwave-safe bowl, combine the milk chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until smooth.
6. Dip each frozen cracker sandwich into the melted chocolate, coating completely. Let the excess chocolate drip off before placing the cookie back onto the parchment-lined tray.
7. Drizzle with melted white chocolate and decorate with sprinkles or chopped peanuts if desired.
8. Refrigerate for 30–45 minutes, or until the chocolate has completely hardened.
9. Store in an airtight container in the refrigerator for up to one week.
